2 3/4 cup Flour
1 1/3 cup Oats
1 tsp Baking Soda
2 1/2 tsp Cinnamon*
1/2 tsp Salt
1 tsp Nutmeg*
1 tsp Ginger*
1 tsp Cloves*
1 c. Butter, softened
1 c. Brown Sugar
1 c. Sugar
1 Egg
1 tsp Vanilla
1 c. Pumpkin puree
Optional: 1 c. m&ms, Chocolate Chips, Peanut Butter Chips, Raisins, etc.
Preheat oven to 350 degrees
Combine flour, oats, baking soda, cinnamon, salt, nutmeg, ginger and cloves. In separate bowl, beat together butter, brown sugar, sugar, egg, and vanilla until fluffy. Add to dry mixture alternately with pumpkin. Fold in remaining ingredients. Drop on lightly greased cookie sheets and bake at 350 degrees for about 12 minutes.
* You could substitute 2 Tbsp Pumpkin Spice for these spices (see http://vannessrecipes.blogspot.com/2016/10/making-your-own-pumpkin-spice-blend.html )
